For a guaranteed final result it is important to start from the beginning.
The coffee plantation and its growers are fundamental to our work. We make sure to rely on importers who, in addition to ensuring seasonal and recognized raw coffee, cooperate with and support the coffee plantation workers.

We work only with trusted partners to import our coffees, primarily Central American, certified, traceable, and high-altitude, with the goal of offering a sustainable, fresh, and controlled coffee experience.

We studied coffees by reflecting on the seasonality of the harvests, the influence of varietal conditions and terroir, balancing them to obtain a specific result that maximizes the raw material we carefully select and adapts freshly but consistently to our blends.

The blends are born from careful research and the idea of being able to respond to the multiple needs of the barista and the end consumer.
Coffee is hygroscopic and absorbs odors and aromas, which is why we create our blend and let it rest before roasting. Through pre-blending, the organoleptic characteristics of beans from different origins are better combined. Each blend has its own distinct characteristics and is easily recognizable.
Roasting
Fresh and delicate
We roast weekly and each roast is recorded, batched and tasted, thus creating a profile for each one and achieving a consistent result in the cup.
We process coffee primarily with two roasting levels: the light roast, ideal for filter coffee, preserves the coffee's naturalness and enhances its acidic and fruity notes, and the monk's robe roast, ideal for espresso coffees, which gives the coffee intense body and a sweet, balanced flavor. The aromatic development of the coffee also depends on this delicate artisanal roasting process.

The roaster is a historic Trabattoni from the 1960s. We've given it a new lease of life, completely revamping it and equipping it with an internal computer capable of reproducing the roasting curve for each roast, ensuring uniformity and consistency across the different roasts. A slow, low-temperature roasting process that respects the coffee's natural properties.

Extraction is fundamental in the preparation of quality coffee: it is the step in which all the previous phases are enhanced and valorized.
We design customized training plans to provide all the tools and suggest the right steps to transform and enhance fresh, selected, well-blended, and roasted artisanal coffees into an excellent cup.
